Golden Vegetable Coconut Soup

Melt 2 T of coconut oil into a soup pan:

Saute:

  • a diced onion
  • 6 minced cloves of garlic
  • an inch slice of ginger
  • a large peeled diced sweet potato
  • 2 diced carrots
  • 2 diced zucchini
  • 2 T Mushroom Mama Immune Warrior Tea
  • seasalt

Saute for 10 minutes, then add:

  • 3 cans coconut milk
  • 3 cans water

Simmer til veggies are soft. Garnish with scallions
