This is a quick, easy and super-delicious meal!  Dulse is an Atlantic Ocean sea vegetable that is chocked full of minerals.

In one bowl, soak a handul of dulse and a handful of dried shiitake mushrooms in 2 cups water

In saucepan, heat 2 T. coconut oil, saute:

  • a diced onion
  • a diced carrot
  • a peeled, diced sweet potato

Saute for 10 minutes, then add:

  • the bowl of dulse and shiitakes
  • 1 T Mushroom Mama’s Power Soup

Bring to a boil then cook on medium heat for 15 minutes

In a separate pan, cook ½ package of udon or soba noodles

Add noodles to broth.  Serve in a bowl, garnish with diced avocado and cilantro”
